Starting with the selection of the finest wheat from Basilicata and Puglia and its milling.
Using the purest water from Mount Sirino's natural spring and the traditional bronze die cutting. Then, a gentle drying process at low temperatures to preserve the unique taste of Lucanian wheat. All according to the ancient tradition of Lucanian pasta makers. A tradition passed down from grandmother Caterina and carried on by Pietro today.
